Who are we?

finca cantillana

Quercus (a genus of trees, both evergreen, like the cork and holm-oak, and deciduous, like the common oak) are trees of great longevity and beauty, characterized by their adaptation to their environment and their contribution to improving it.

The Quercus forest known as “dehesa”, is a vivid example of how humans can, if they wish,  improve their environment and generate a sustainable system to be passed on to future generations.

The principles of “País de Quercus” are:
Imagination
Honesty
Common Sense
and Respect for Nature.

Who are we?

This philosophy has been promoted since the year 2000 by “ País de Quercus”, an association of breeders who love the dehesa , which aims to put all the products obtained from this natural paradise of Extremadura and other parts of the south-western Iberian peninsula on the market.

What do we do?

1. We promote free-range farming in the dehesa in order to raise the value of our products, highlighting the difference from intensive farming.
2. We breed animals from native varieties, we look after them and feed them using the free range system.
3. We process the products from our own dehesas (Iberian pork delicacies).
4. País de Quercus also promotes  research, in a constant quest to recover traditional preparation processes, as well as in creating new methods to get value-added cuts like Iberian bacon, Iberian pork fat, Iberian liver, etc.
5. We guarantee the high quality and traceability of all our production.

Why frozen meat?

Iberian pigs fed on acorns and pasture grasses are slaughtered in the months of January, February and March, when the acorn-harvesting season, also called “montanera“, ends. During those three months “País de Quercus” packs and deep-freezes (minus 41 °C) all the meat of the season so you can enjoy it all year round without any loss of quality.
